However, visual observations may be unsatisfactory due to eye fatigue, poor color memory of subjects, lack of uniform lighting and standardized viewing conditions, and unavailability of trained judges, especially for routine large-scale color quality determination (Hutchings, 1999).Ĭolorimeters and spectrophotometers have been used extensively in the food industry to quantify color.
